Since its introduction in 2008, Bubbakoo’s Burritos, the quick service new American, Mexican, Tex-Mex menu concept has grown in the Jersey Shore area. With its latest location, and the first outside of the Shore area, opened earlier this year on Easton Ave. at the Rutgers University campus in New Brunswick, New Jersey, the Bubbakoo’s chain now numbers eight locations. Following the opening, the owners, Paul Altero and Bill Hart, introduced a franchise program with initial plans for growth across the state. Bubbakoo’s features a diverse menu, completely customizable, that offers a wide range of flavors ranging from a Chiwawa bowl packed with fried rice, cheese and panko breadcrumbs to the signature nachos, tacos, burritos, quesadillas and taco salads. Some of the specialty toppings include buffalo chicken, sriracha pork, fresh spinach, and steak and shrimp, etc.
