In early 2016, Rancho Santa Margarita, California-based Pieology Pizzeria will open a 2552 square foot unit in the Nocatee Town Center in the planned community in the Ponte Vedra Beach area, about 18 miles southeast of Jacksonville. It will be the four year old chain’s first location in Florida. The restaurant will share the new 11,670 square foot building with Dunkin Donuts, M-Shack, Big Fish Yoga, Coastal Wine Market and Verizon Wireless. The Pieology menu features the fresh house-made dough that is pressed into 11.5-inch thin pizza crusts. Guests first select from eight signature sauces, moving down the line to choose from more than 40 fresh meats, cheeses, vegetables, herbs, and spices. The customized pizzas are then stone oven fired in less than three minutes. To finish, guests have the option to add Pieology’s signature after-bake ‘Flavor Blast’ sauces, including fiery buffalo, pesto and BBQ. The quick casual chain is also under development on units in the St. Johns Town Center in Jacksonville and the Fountain Square in Miami.  The four year old chain currently operates over 70 locations in more than 20 states and is on schedule to have more than 80 restaurants open by the end of 2015.  The company reports that commitments are in place for nearly 600 units.  Earlier in November, that company reported that industry veteran Randy Carucci had joined as Vice President, Real Estate.
