John Bornoty launched The Big Salad quick service concept in 2008 with the goal to grow in such a way that is sustainable in terms of maintaining superior product and service offerings, as well as being an asset to the communities in which it operates. Today, the Big Salad restaurants are operating in Michigan in Ann Arbor, Grosse Pointe Woods, Novi, Royal Oak and Troy with units opening in Charlotte and East Lansing, also in Michigan, in the Fall. The Grosse Pointe-based franchise chain is planning to open 100 units in strategically located metro areas across the country within the next ten years and is presently targeting sites in the state in Rochester, Bloomfield Hills, Canton and Grand Rapids. The restaurants features twelve signature entrée made-to-order salads and with its choice of lettuce, toppings and dressings, the build-your-own salad menu selection is almost endless. It is joined by a selection of fresh sandwiches, soups and chili and wraps. The chain is registered to offer franchises in most states and presently sourcing franchise partners.  The restaurants will operate in to formats. The larger 1400 square foot units will operate in populated areas with a good cross section of office, commercial, retail and residential activity.  The 700 to 1200 square foot units will operate in mall and mixed-use food courts, airports, hospitals, universities, etc.
