The J. Gumbo chain of quick casual Cajun and Creole menu restaurants expects to open several new units in New York City, Fort Lauderdale and Cleveland, as well as Jonesboro, Arkansas soon, with more to be added. Presently there are about 35 restaurants in eleven states and about 15 more are under development. With new multi-unit area development agreements as well as single restaurant franchises, the chain is on a roll towards national expansion.  “We are a fast casual concept that boasts a footprint so flexible it can fit into almost any space, with minimal kitchen equipment requirements, low labor costs, and unparalleled ease of operations,” says Development Partner John Macaluso. “J. Gumbo’s central kitchen and cooking platform guarantees product quality and consistency in the J. Gumbo’s brand.”  The restaurants are designed to fit in all kinds of spaces. Its compact footprint and minimal kitchen requirements will allow a J. Gumbo’s dine-in restaurant in a space as small as 1000 square feet and in even smaller spaces at food courts and other carry-out venues. The chain is particularly interested in converting unique or historic buildings. Urban sites, entertainment complexes, strip centers, college campuses, stand alone units as well as mall and airport food courts are targeted.
