Restaurant & QSR Expansion Report

A Dinosaur Found in Buffalo

Originally a mobile food concession at fairs, festivals and motorcycle shows in the Northeast, Dinosaur Bar-B-Que opened its first permanent location in Syracuse in Northern New York in 1988 as a quick service restaurant.  In 1990, that unit tripled in size, adding a full bar, full service dining and live music and more growth followed.  In 1998, Dinosaur Bar-B-Que opened in Rochester in Northern New York, in Harlem in New York City in 2004, in Troy, New York in late 2010, in Newark New Jersey in May 2012, in Stamford, Connecticut in December 2012 and last week at 301 Franklin St. in the Theatre District in downtown Buffalo, New York.   A film storage vault for Universal-International Pictures in the mid-20th century, the 7200 square foot location with seating for about 210 offers its own unique flare with front exterior featuring an art deco-style marble façade that was revealed during construction and is again mimicked in Dino’s bar details. Reclaimed wood and rolling fire doors are used to divide space into smaller dining areas.  A 50-seat semi-private dining room is suitable for large gatherings and an outdoor seating area with an additional 36 seats will be open in the warmer months. Dinosaur Bar-B-Que restaurants feature a fresh, homemade menu firmly rooted in the traditions of Southern bar-b-que, smoked low and slow over hickory. Classics such as the Jumbo BBQ Chicken Wings, St. Louis Style Ribs, Barbeque Pork Shoulder and Beef Brisket are featured on the menu, along with homemade sides including BBQ Fried Rice, A.K. Chili and Mac & Cheese. As with each location, dishes crafted just for Buffalo will be featured.  Wine and specialty cocktails are served along with local, regional and seasonal craft beers. The Buffalo restaurant also offers an extensive beer list with 18 beers on tap alone, half of which are from Buffalo or New York State.
