In late February, Atlantic City-based Tony Boloney’s opened its second location in Hoboken, a community in New Jersey’s Hudson County and part of New York’s Metropolitan area. The 1075 square foot street front unit is on First St. at Willow Ave. in the former Filippo’s Pizza location that closed after Hurricane Sandy. Tony Baloney’s is a five year old quick casual concept that features made-from-scratch pizzas, submarine sandwiches, wraps, salads, etc. Owner Mike Hauke also operates Mustache Mobile, a food truck concept for events and catering services. He notes that there are aggressive plans to roll-out the Tony Boloney’s brand in three formats and he is currently seeking a franchise development consulting to work with him. The plans include a quick service format similar to the Mustache Mobile concept, more of the quick casual units similar to the two existing location and a pub/market concept. Highly visible and high traffic sites ranging from 1500 to 3000 square feet are required. Patio areas, while not a must, are a welcomed addition. A liquor license is also an added plus.
