Restaurant & QSR Expansion Report

Chop-Chop on the Tampa Bay Menu

In late Summer, a 2500 square foot Chicken Kitchen quick service restaurant is opening at the University Park Center in Bradenton in Florida’s Tampa Bay area, according to recent reports in the Bradenton Herald. Franchisees Gris Bettle and Justin Mattina noted that the restaurant’s look and menu will differ slightly from other Chicken Kitchen locations. The décor takes on a more local-look and the menu will be modified to reflect local tastes with a focus on the strong core items. The unit will also be the first to offer beer and wine. The franchisees’ long term plan is to have six Chicken Kitchen restaurants in the Tampa Bay area in five years. Christian de Berdouare launched the Chicken Kitchen in the late 1980s in New York featuring a slow grilling process and signature dishes. The menu features a large selection of freshly marinated grilled chicken entrees ranging from chicken on the bone, skinless boneless breast platters, its signature Pita-Pockettes and Panini Grillers artisan sandwiches to the Chop-Chop, a freshly marinated chopped boneless breast of chicken topping a bowl of rice and mixed with various ingredients and a choice of Signature Sauces. Today, the franchise company is based in North Miami and includes about 26 franchised locations in Florida and three in Texas. The traditional restaurants range in size from 1200 to 2400 square feet and target neighborhood plazas and urban downtown locations. Corner locations are preferred and widths of at least 18 feet are preferred.
