Earlier in the week, The Egg & I restaurants opened its 98th restaurant. The restaurant is at 7175 North Davis Hwy at the University Mall in Pensacola in Florida. Headquartered in Centennial, Colorado, the full service, breakfast and lunch chain is also scheduled to open its fifth location in Florida in mid-June in the Quantum Village Center on W. Gateway Blvd. in Boynton Beach. The 27-year old chain operates company-owned and franchise restaurants in over 20 states and expansion continues. Operating until 2:00 pm on weekdays and 2:30 pm on weekends, the chain is under development on units in Tennessee and Texas and is sourcing opportunities in several states including North Carolina. The Egg & I restaurants require 3400 to 4000 square feet and seating for at least 140. Highly visible units with convenient access are targeted and patios are welcomed.
