Earlier in March, quick casual Mexican food chain Bueno Y Sano opened an in-line 2000 square foot unit at the Riverside Shops center on Riverside St. at Dagget Dr. in West Springfield, Massachusetts. It is the sixth location for the 19-year old chain that features a menu of burritos, quesadillas, tacos and salads. Bob Lowry, a University of Massachusetts graduate, launched the concept in Amherst, Massachusetts combining the principles of a good food offering, a customer-focused management style and an entrepreneurial approach. Shortly after the launch in 1995, he was joined in the business by Rolando Saravia and today the restaurants are operated by Lowry, Saravia and family. The chain presently includes locations in Northampton, Springfield and Acton in Massachusetts and a unit in Burlington, Vermont along with the initial Amherst unit and the latest West Springfield restaurant. In addition to the quick casual chain, Lowry continues an involvement with the University of Massachusetts teaching classes in leadership as well as entrepreneurship. He is also co-owner of Rao’s Coffee, a specialty coffee roasting company with locations in Amherst and Northampton.
