In responding to reports of the J. Gilbert’s Wood-Fired Steaks & Seafood chain moving into South Florida, Warren Lane, the company’s National Director, Franchising and Development, stated that while the company has identified South Florida as a growth market for the J. Gilbert’s Steak & Seafood restaurants, the company is still in the early stages of development. “We are still speaking to potential qualified franchise operators and a specific site has not been identified,” he added. Part of Houlihan’s Restaurants Inc. restaurant company, J. Gilbert’s is an upscale-casual Kansas City-steakhouse concept that features various cuts of USDA Prime steaks and fresh seafood cooked over a wood-fired grill along with house-made specialties and an extensive martini and wine list.  Presently there are five locations, in Overland Park in Kansas, McLean in Virginia, Glastonbury in Connecticut, Worthington in Ohio and St. Louis in Missouri. Lane did note that the company typically focuses on the top 75 metro areas for expansion. Highly visible end cap locations in anchored specialty centers, lifestyle centers, entertainment districts and mixed use developments are targeted.  Pad sites adjacent to higher end retail, malls or business districts are also considered. The unit size required is in a 7000 square foot range with seating for about 250 guests.
