Restaurant & QSR Expansion Report

Veteran Franchisees Go Mexican

Construction is underway on the first 3 Pepper Burrito Co, a new quick casual Mexican restaurant concept set to open at the Target and Publix-anchored center at Santa Barbara Blvd and Veteran’s Pkwy in Cape Coral in Southwest Florida. The initial flagship 1400 square foot, 35 seat unit is expected to open in early September. The 3 Pepper Burrito concept will be designed in a traditional quick service manner in which customers choose a main ingredient and then customize with options.  “We will have fresh ingredients, unique house made sauces, uniquely flavored fresh chips just to name a few,” said principal Justin O’Brien. “We will have a large variety of sauces and toppings so the possibilities are endless. Chicken, pork, steak, beef and even a spicy black bean option will be available. All veggies are prepped throughout the day and come in fresh three times a week. Of course we will have a beautiful three pepper melody as our center piece consisting of green, red and yellow peppers.”  Owners O’Brien and Tim Goff, currently own Pita Pit restaurant franchises in South Florida and O’Brien noted that they intend opening additional 3 Pepper Burrito Co units in the area over the coming two years with a plan to franchise.  A typical location would be in a 1200 to 1800 square foot range. While drive-thru facilities and a patio area are not included in the initial location, they would be welcomed in future locations.
