Franchisees Mike Berschback and Nabil Shurafa opened the first Which Wich Superior Sandwiches restaurant in Grosse Pointe in southeast Michigan earlier in April according to reports in the Detroit Free Press. The street front unit is on Kercheval Ave. between St. Clair and Notre Dame streets. The Dallas, Texas-based chain of over 300 restaurants operates one other location in Michigan, in Petoskey, about 230 miles north. The franchise partners are planning additional Which Wich locations in the metro Detroit area with their next location on Greenfield Rd. in Southfield. Which Wich is an eleven year old quick casual sandwich concept that features an ordering system in which customers use red Sharpies to mark up pre-printed menus on sandwich bags. They select a sandwich from one of ten categories and then choose the type of bread, size, cheese, spreads, and vegetables. The sandwiches are prepared to customers’ exact specifications and delivered in personalized sandwich bags. The chain traditionally targets units of about 1600 square feet with at least 20 feet of frontage and a minimum ceiling height of twelve feet. Corner or end cap units are preferred though in-line locations are considered. Smaller mall food court locations are also considered. Mid to upper income markets with a minimum of 100,000 people within three miles are preferred. The chain targets an 18 to 39 year old clientele. Lisa Walker is the Director of Real Estate.
